  • The aromatic leaves of lemon balm can be used to increase the flavors of green salads, fruit salads, desserts, ice cream, soups, sauces, white meat and fish. Lemon balm leaves are often used to flavor herbal teas – often in combination with other herbs such as peppermint and spearmint. Lemon balm adds flavor and color to herbal fruit drinks, punches, and cocktails. Even the sweet-scented flowers are distilled to make Eau de Carmes – a popular herbal tonic that has been formulated by the Carmelite nuns from the Abbey of St Just in the 14th century.

  • Lemon balm (Melissa officinsalis) is a member of the mint family. This aromatic herb is native to south-central Europe, North Africa, and the Mediterranean area. Lemon balm has been recorded in classical Greek and Roman literature 2,000 years ago. Historically, lemon balm is known as a “honey plant”, hence the genus name "Melissa", meaning "honey bee" in Greek. The plant was likely named for its ability to attract bees. Lemon balm has also gained popularity as a valued medicinal and culinary herb.
  • The essential oil of lemon balm contains citronellal and citral – the same ingredients that are found in the essential oils of lemons. The essential oil aids to digestion, increases perspiration, reduces spasms, combats bacteria, and intestinal disorders. Lemon balm also is known as a calming herb and has been used for centuries to treat minor sleeplessness and nervous stomach disorder.
