Sorrel is a herb with a bright, lemon flavor. Particularly its leaves have a sour taste. It is rich in potassium and vitamins A, B1 and C. The leaves may be puréed in soups and sauces or added to salads, their flavor is a bit similar to kiwifruit. The plant's sharp taste is due to oxalic acid. Throughout eastern Europe, wild or garden sorrel is used to make sour soups, stewed with vegetables or herbs, meats or eggs.
